Chicken Zoodles in Tomato Cream Sauce

Ingredients: 2 lbs chicken breasts, diced 4 medium zucchinis, spiralized (about 8 cups zoodles) 1 onion, diced
3 cloves garlic, minced 28oz can diced tomatoes 1 cup chicken broth 1 cup heavy cream 2 tsp oregano 1 tsp basil 1⁄4 cup parmesan (for serving)

  1. Heat oil in a skillet over medium heat. Cook chicken 5-7 minutes until no longer pink. Remove from pan and set aside.
  2. Add zucchini noodles, onions and garlic to the skillet. Cook for 3-4 minutes until vegetables soften.
  3. Stir in diced tomatoes, broth, heavy cream and spices. Bring to a simmer.
  4. Add cooked chicken and heat through another 2-3 minutes.
  5. Serve in bowls topped with parmesan cheese. Enjoy!
